The Ajinomoto, also known as “Aginomoto” is a world-famous food flavor enhancer. It surprisingly enhances the taste of foods. You can found it in almost all kind of Chinese dishes. What is Ajinomoto?

You may hear the name of Ajinomoto as a food ingredient. But it is not a food ingredient actually. The Ajinomoto is a Japan-based food and chemical corporation which produce Monosodium Glutamate, cooking oils, amino acids, seasonings, and pharmaceuticals. They use the AJI-NO-MOTO as the trade name for Monosodium Glutamate or MSG.

Basically, Monosodium Glutamate is a salt which increases the taste of any food significantly. The ingredient was first marketed in Japan in 1909 after being discovered by Kikunae Ikeda. He named the taste as umami which is currently treated as one of the five basic taste of food. The magical power of the MSG increased the popularity of it within a short time.

Is Ajinomoto Harmful?

The Ajinomoto or Monosodium Glutamate is the salt of the glutamic amino acid. Our body can also produce it naturally.  But when it is created unnaturally outside the body, it becomes harmful to health. Consuming the Monosodium Glutamate for a long time can cause many physical glitches. It causes face burn, weakness, headaches most of the time after you absorb it. Some recent studies proved that in the long run, it could cause nerve overstimulation and heart diseases, much more health problems.

Anyone can take Ajinomoto but not excessively. Currently, the Ajinomoto is used all over the world. Almost all the food giant and popular restaurants use the Ajinomoto to enhance the flavors of their foods. As a result, peoples are consuming it at a higher level and increase the risk of various physical bizarre.

How This MSG Is Made & Why Is It So Harmful?

MSG is naturally available in many foods. Seaweed broth is one of it, and it has a higher percentage of glutamate. The glutamate is the main ingredient which makes the seaweed broth so tasty. In 1909, professor Kikunae Ikeda was able successfully extracted the glutamate from the seaweed broth. Then he added sodium with it and make it Monosodium Glutamate. In the same year, the commercial production of MSG started. Nowadays, the MSG is produced from fermentation of sugar beets, molasses, starch.

The MSG increases the glutamate in our blood. It increases the glutamate of our blood up to 8 to 10 times which causes various heart diseases. On the other hand, MSG is a neurotransmitter which causes misbalance and overstimulates of nerves.

Nerve Effects

Excessive consumption of Ajinomoto is also harmful to our nerves. The MSG is a neurotransmitter, which induces imbalance of nerves. You can feel numbness, face and neck burn after eating foods that contain MSG.  Excessive eating of MSG can cause neurodegenerative disorders like Parkinson’s, Huntington’s, and Alzheimer’s.


Headaches are a common effect of Ajinomoto or MSG. Most of the people feel headache pain after eating foods that contain MSG. Excessive consumption of MSG can even lead you to a migraine headache. Migraine headaches cause intense pain in the head.



Some recent studies proved that MSG could cause leptin resistance in the human body. Leptin is a hormone which sent indications to our body to stop eating as soon as we full. When we take excessive MSG, the leptin hormone stops working correctly. As a result, we start overeating and gain weight.

The Glutamate of MSG increases the glutamate level in blood 8 to 10 times. As a result, the blood pressure rises significantly and causes many heart diseases. In 2002, the Nutrition Study (JIN) analyzed data of 1227 Chinese who takes MSG often. The result shows that blood pressure increases of the people in a higher scale.

The FASEB report of 1995 proved that MSG could increase the asthma problems. Those who are sensitive to the food additive, should not take the MSG.


There is a belief that excessive consumption of MSG can lead you to cancer in the long run. However, there is no scientific proof of it. More research is required to find out the MSG’s cancer prompting capabilities.


The higher MSG consumption in the pregnancy period can break down the placental barrier of food supply to the baby. It can also harm the brain neuron of unborn babies. Besides, the high sodium level of Ajinomoto can cause water retention and high blood pressure.
